A busy distillery in the Caribbean sunshine offers plenty of photo opportunities. But capturing the real story of rum calls for a different approach.

Rum from Jamaica is known all over the world and the island's Appleton distillery is now a tourist attraction. Its reception is very neat and at the front is a small, well-kept garden - all very photogenic.

However, it is behind this facade that the real atmosphere is to be found. Sugarcane plantations and rum are almost as old as Jamaica itself and it is precisely this feeling of age that you get while walking through the extensive grounds of the plantation.

You can almost hear the absence of any noise

My photos show the warehouse manager, and some of the workers in the "sugar house" where the sugar cane comes in. I felt an air of stillness and that is what I tried to capture by making a portrait of them while they were at rest.

One worker seems to be stopped in his tracks and indecisive as to whether to move or not. The manager is all alone and you are left wondering what exactly he manages. You can almost hear the absence of any noise in the thick-walled building. It is as if they do not want to disturb the rum quietly aging.
